Drawing inspiration from a London club, the Madcap Lounge is a walk-down within the National Block building and just one floor removed from The George. In August of 2016, chef Laurel Burleson launched the Ugly Apple Food Cart. She has been cooking in professional kitchens since high school and has a degree in hospitality management. After cooking for several years around Chicago and Madison, she saw how much was going to waste of this fantastic Midwestern produce. She envisioned owning a cafe that focused on delicious local produce. Hence, the Ugly Apple was born. Like the story of the Ugly Duckling, the Ugly Apple might not be bought at market but can still make a beautiful fritter.
