In August of 2016, chef Laurel Burleson launched the Ugly Apple Food Cart. She has been cooking in professional kitchens since high school and has a degree in hospitality management. After cooking for several years around Chicago and Madison, she saw how much was going to waste of this fantastic Midwestern produce. She envisioned owning a cafe that focused on delicious local produce. Hence, the Ugly Apple was born. Like the story of the Ugly Duckling, the Ugly Apple might not be bought at market but can still make a beautiful fritter. The health and safety of our guests and attendees is something we take seriously. Baird Center has achieved Global Biorisk Advisory Council® GBAC STAR accreditation, the gold standard for prepared facilities, by implementing the most stringent protocols for cleaning, disinfection, and infectious disease prevention.

Baird Center has installed refillable water stations and our food and beverage partner, Levy Restaurants, has reduced the use of plastic dinnerware when possible.

Baird Center has a solar roof that provides 98,130 Kilowatt-hours. That’s the equivalent of the CO2 emissions from 7,488,199 smartphones being charged.

Baird Center's expansion and modernization project, completed in 2024, committed to a residents-preference program where at least 40% of the on-site construction labor hours were performed by workers living in Milwaukee’s most disadvantaged zip codes. Additionally, the Wisconsin Center District set a workforce goal of having at least 31% of labor hours worked by minority (25%), women (5%) and disabled veteran (1%) tradespeople. The project greatly exceeded those goals by reaching 41.3%.
