Chef Cuadros heeft een Culinary Arts-diploma behaald aan de Johnson and Wales University en heeft uit de eerste hand geleerd van verschillende wereldmeesters, maar zijn passie voor koken begon toen hij zijn moeder en tantes hielp in de keuken in Cali, Colombia. Hij begon zijn culinaire carrière als afwasser en kreeg de kans om gasten te verrassen met zijn kookkunsten dankzij een kok die niet kwam opdagen — nu verblindt hij Chicagoans elke avond vanuit de keuken van Carnivale!
