After cooking for several years around Chicago and Madison, she saw how much was going to waste of this fantastic Midwestern produce. She envisioned owning a cafe that focused on delicious local produce. Hence, the Ugly Apple was born. Like the story of the Ugly Duckling, the Ugly Apple might not be bought at market but can still make a beautiful fritter.
